Thanksgiving Recipe : Daddy's Real Corn, Cornbread

I was that loner kid who read comics when everyone else was playing, listened to the B-sides, watched old movies ... And wrote in spirals

I heard a grandfather say that his favorite holiday was Thanksgiving. That he adored this unique day more so than Christmas. Because it wasn't about the hustle and bustle of giving the perfect present or stressing over whether you get anything.

Thanksgiving is about family gathering together and just enjoying one another's presence (not presents) and lots and lots of eating. Lots and lots of food. The only time you can indulge in your love for cranberry sauce by buying several cans, without anyone looking at you like you have horns and two tails.

Its about waking up early on Thursday morning. The clanging of pots. The fogging up of the kitchen windows. The aromas that travel around the corners into each and every room, grabbing you by the nose like on the cartoons. Straightening up the living room, making sure everyone is showered and dressed. Putting sports or a movie on the central television or music on the stereo ... Togetherness.

What do you do when your wife is running errands well into dinner time? What do you do when your 15 year old decides he doesn't want to eat pork anymore? Most of all, what do you do when you have leftover shredded carrots from last week's Carrot Cake dessert?

Well, first of all, you don't wait for your wife -- you cook!. Second, you find other meat alternatives. In our family we've discovered Turkey Chops, but in this case, tasty Chicken Sausage. And as for the leftover carrots ... Since cornbread seems to taste a little better with whole kernel corn mixed in and cake tastes kind of nifty with carrots in it ... What if we mix the corn and the carrots inside of the cornbread? If nothing else, it'll sure enough look pretty.

Usually my only contribution to the Thanksgiving dinner is a couple of Egg pies. But that's not the only thing that I know how to prepare. Because my mother taught me when I was young that I shouldn't have to depend on a woman to cook for me; that I should be able to feed myself at all times. So with that in mind, no matter how bare the cupboards seem, I will never, ever go to bed hungry. I'll put something together, one way or another.

Here I would like to share one of my special recipes. This is something I simply refer to as Daddy's Real Corn-Cornbread. I hope you like it.

Let's Cook

Prep time: 15 min
Cook time: 30 min
Ready in: 45 min
Yields: Serves approximately six to eight people

The Formula

  • 2-3 eggs
  • a sprinkle or 2 shredded carrots
  • 1/4 cup sugar
  • 2 1/2 cups milk
  • 1 can whole kernel corn
  • negotiable cooking oil
  • 1 box favorite brand of corn bread mix

  1. Follow basic box instructions, including heating oven and greasing baking pan. Set pan in the oven in order for the oil to heat up.
  2. I like to use eggs in my mix, because I like how they add to the mixture. As well, I use milk to get that cake consistency.
  3. Pour can of corn into the mixture. Sprinkle shredded carrots as well to your own personal taste. Stir all of this together, in order to even out the extra ingredients. Sprinkle sugar for a sweeter taste.
  4. Once baking pan is hot, pour mixture and place back in the oven. Approximately 30 minutes. But the object of the game is to get a golden brown color, as well as cooking all the way through. May be moist from the corn. Use your own discretion.
